Tamai Hamamori
Culinarian
Born in Hokkaido in 1972, Tamai Hamamori's journey began in the music industry, where she managed artists and handled production promotions for a record company.
Following her passion for cooking, she honed her culinary skills while running a small eatery in Shibuya's Nonbei Yokocho for seven years.
Today, Hamamori is a renowned culinary expert, providing catering for magazine and advertisement shoots, and making frequent media appearances.
Her sporadically held cooking classes are immensely popular, often fully booked.
Fondly known as "Tamachan," she continues to be adored by many.

Mint Salad with Water Eggplant
MT. WASHINGTON Pottery was founded by former make-up artist and women’s magazine creative director Beth Katz. Crafted entirely by hand in her Los Angeles, California studio, Katz's work draws influence from the wabi-sabi aesthetic of traditional Japanese ceramics and the modernism of Scandinavian design.
The LUNCH 9” plate, featuring vintage-like coloring and soft contours, stands out for its timeless beauty.

Sautéed Summer Vegetables
The ceramics by FUTOSHI YAMASHITA beautifully encapsulate the grandeur of Kumamoto’s Aso region.
Yamashita’s process begins with sourcing clay from the mountains of Aso, crafting each piece with a deep connection to nature.
The VOLCANIC PLATE, true to its name, combines multiple glazes made from lava and volcanic ash, creating a unique texture and appearance. Each piece exudes a powerful presence, reminiscent of gazing into an active volcano from above.
Seasonal vegetables can become a gourmet delight with just a touch of preparation.
This time, we present lightly grilled zucchini and young corn, paired with a special shrimp paste.
The sweetness of the summer vegetables contrasts beautifully with the spicy kick and the refreshing basil notes, offering a delightful culinary experience.
A key point is to enjoy the sweet young corn silk as well. To prevent it from burning, roast the corn in the oven with the husk intact.
When using these unique, expressive dishes, leave some empty space for a more refined arrangement.

Deep-Fried Mehikari
Introducing WASHIZUKA GLASS STUDIO, a handmade glassware brand founded by Takanori Washizuka.
Each piece is crafted with straightforward shapes that are easy to imagine in use, featuring simple, functional designs that highlight the beauty of glass and the warmth of handcrafted artistry.
Glass plates are perfect for salads and carpaccio, but they also pair exceptionally well with fried dishes.
Lightly battered and quickly fried to avoid overcooking, the mehikari (Japanese greeneye fish) is fluffy and tender.
Served with julienned ginger, cilantro, and a black vinegar-based sauce for a refreshing taste.
Dishes presented on glassware appear to float on the water’s surface, creating a cool and refreshing summer vibes.

Somen with Clams and Tomato
Introducing TokuroTakimoto, whose workshop is nestled in the lush, natural surroundings of Tsuno Town, Miyazaki Prefecture.
Takimoto’s ceramics, designed to feel familiar in the user's hand and to bring joy with their colors and textures, offer a surprising lightness despite their substantial appearance, fitting comfortably in the hand.
The 8-inch Plate features a deep hues of iron glaze, resulting in a functional design with a moderate depth.
Ideal for simmered dishes and brothy meals, this plate is both practical and attractive.
Somen noodles, a staple during the peak of summer, effortlessly slide into your stomach even when your appetite is low.
With a little extra effort, you can elevate this simple ingredient into a visually stunning and impressive dish, akin to a pasta + no-broth noodle creation.
Start with a base sauce of olive oil, garlic, and chili peppers. Add blanched cherry tomatoes and plump clams.
The refreshing acidity of the tomatoes and the umami-rich clam essence absorbed by the somen create a deeply flavorful experience.
Compared to pasta, somen’s quick cooking time is a convenient bonus, especially when preparing for guests.

Balsamic Sauce Steak
Introducing Itaru Moriyama, a ceramic artist from Amakusa City, Kumamoto Prefecture.
Using primarily local materials from Amakusa, Moriyama creates tableware under the motto of "dishes that harmonize with food."
Inspired by loofah seeds, his signature item, the oval-shaped SEED PLATE, features expertly adjusted curves and rim widths on both sides.
The asymmetrical shape and the chic texture of the iron glaze give it a strong presence on any dining table.
A large piece of meat served at a gathering is a show-stopping main dish that elicits cheers the moment it’s presented.
Black tableware creates a stunning contrast with the reds and greens of the ingredients, enhancing the dish's visual appeal.
The charm of an oval-shaped plate lies in its stylishness without taking up too much space on the table and its versatility, accommodating various types of cuisine.

Beef Chirashi with Condiment
Introducing Naoki Kanazawa, a ceramic artist from Amakusa, Kumamoto Prefecture, who creates "everyday usable tableware" with a belief in the harmony of utility and beauty.
His work is distinguished by the unique expressions of flowing glazes and a perfect balance of colors.
Inspired by the breathtaking nature and majestic landscapes of Amakusa, Kanazawa captures these moments in the colors, shapes, and textures of the pieces.
Each piece showcases a distinct expression, exuding the warmth of handcrafted artistry, with no two exactly alike.
The LARGE PLATE - COMET, beautifully painted with a stroke of blue, like a comet streaking across the night sky.
While it may seem like a challenging color to work with, it harmonizes wonderfully with rice dishes, as seen here.
Season beef with white miso, soy sauce, and sake, then serve it on vinegar rice topped with your favorite condiments and nuts.
The key is to mix freshly cooked rice with plum vinegar and olive oil, creating a rich and mellow acidity distinct from regular vinegar rice.
Be sure to mix well before eating to fully enjoy the flavors.
