Umami, saltiness, sweetness, bitterness, and sourness are generally considered the foundational five tastes in the world of flavor.
Achieving a sense of balance among these basic five tastes is what seekers of deliciousness continually cultivate through trial and error.
Among these tastes, I'm particularly fascinated by "sourness," and I explore it on a daily basis.
Sourness comes in many forms, like Japanese plum, vinegar, yogurt, and more. I personally consider citrus to be the king of sourness, as it embodies the essence of the earth's bounty.
Fruits such as oranges, mandarins, and grapefruits represent this category well. They strike a perfect balance between sour and sweet, making them enjoyable to eat as they are.
On the other hand, citrus fruits like lemons, limes, kabosu, and sudachi are not suited for consumption on their own, but they are indispensable accents in beverages and dishes.

In recent years, I've tried to incorporate fresh citrus fruits into my daily menu as much as possible.
I start my day with freshly squeezed orange juice, and I even boil pork with its peel.
Instead of vinegar, I use lime in my homemade dressings.
When I have guests, I serve plenty of sudachi and lemon alongside shochu and carbonated drinks.
