Founded in Shuri, Okinawa in 1949, ISHIKAWA specializes in Awamori liquor. The founder, Seijiro Ishikawa, learned the techniques of distilling in the castle town of Shuri, where only three distilleries were allowed to operate, and later spread his knowledge to Amami Oshima and Ishigaki Island. Even today, this is one of the few distilleries that still uses the traditional method of fermentation in earthenware jars, and continues to produce traditional Ryukyu Awamori, which is made with great care and skill by skilled artisans.
